Vegetable Frittata

Really tasty and healthy lunch. Serve with a salad and chips or enjoy it on its own as a snack.

Level: Easy

Serves: 8

Prep: 15 minutes

Cook: 35 minutes


Ingredients:


1 large or 2 small red onions (chopped)

400g frozen vegetable medley

1 can of chickpeas

6 eggs

Optional - 200g cheddar cheese (grated)


Preparation:


Line a 2lbs loaf tin with baking paper and preheat the oven to 175C.


In a frying pan add 1-2 tbsp olive oil and fry the onions until they are soft. Add the frozen vegetables with 3 tbsp of water and cook until the vegetables are not frozen anymore and the water is gone. Rinse and add the chickpeas, season with what you like (I used salt, pepper, garlic granules and oregano) and cook until the moisture is evaporated. Pour the vegetable mix into the lined loaf tin. Crack the eggs in a bowl, season with the same seasoning as your vegetables and beat them until well combined. Pour it very slowly over the vegetables. (It takes time until the eggs manage to go between the vegetables so take your time when you are pouring the eggs!) Sprinkle the cheese on top (optional: I didn’t use any cheese this time and I didn’t miss it.) Bake for 35 minutes. Turn it out onto a cooling rack, slice and enjoy!
