Chocolate Muffins

Perfect with a cup of coffee or tea, moist and indulgent treats!


Level: Easy

Serves: 12

Prep: 15 min

Cook: 20 minutes


Ingredients:

2 cup self raising flour

1 tsp sodium bicarbonate

2 cup sugar

1/4 tsp salt

4 tbsp cocoa powder

2 eggs

1/2 cup vegetable oil

1/2 cup hot water

1 cup kefir or buttercream

1 tsp vanilla extract

100g milk chocolate chips

100g dark chocolate chips

Preparation:


Line a muffin pan with muffin cups and preheat the oven on 175C.


In a bowl combine flour, sodium bicarbonate, sugar, cocoa powder and salt. Then stir in the eggs, kefir, vegetable oil, hot water and vanilla extract. Mix until its just combined. Stir in the chocolate chips.

Spoon some batter into the muffin cups (about 3/4 full) and bake them for 15-20 minutes. Do the toothpick test. If it isn’t clean, put it back in the oven for another 5 minutes, then do the test again.
