Apple Cinnamon and Pecan Muffins

Perfect with a cup of coffee or tea, moist and crunchy treats!

Serves: 12

Prep: 15 min

Cook: 20 minutes


Ingredients:


2 cup self raising flour

1 tsp sodium bicarbonate

1 cup sugar

1 cup brown sugar

1/4 tsp salt

1 tsp cinnamon

1/2 tsp mixed spice

2 eggs

1/2 cup vegetable oil

1/2 cup hot water

1 cup kefir or buttercream

1 tsp vanilla extract


2 large apples cored and diced

75g chopped pecans


Preparation:


Line a muffin pan with muffin cups and preheat the oven on 175C. Chop the pecans, core and dice the apples.


In a bowl combine flour, sodium bicarbonate, sugar, brown sugar, cinnamon, mixed spice and salt. Then stir in the eggs, kefir, vegetable oil, hot water and vanilla extract. Mix until its just combined. Stir in the apples and the pecans.


Spoon some batter into the muffin cups (about 3/4 full) and bake them for 15-20 minutes. Do the toothpick test. If it isn’t clean, put it back in the oven for another 5 minutes, then do the test again.
