Fluffy pancakes

These pancakes are so fluffy and gorgeous! You can make them ahead, freeze them and just pop them into the toaster to defrost and get a crisp outside but still fluffy inside. Yum!

Level: Easy
Serves: 2 people (4-5 pancakes)
Prep: 5 min
Cook: 5 minutes
Ingredients:
2 cups self raising flour
2 tbsp sugar
1/2 tsp baking soda
1/4 tsp salt
2 large eggs
2 cups kefir or yoghurt
1tsp vanilla extract
vegetable oil spray (to grease the pan)
Preparation:
Use a spatula to mix the dry ingredients, add the wet ingredients, then stir until no flour streaks remain but there are still plenty of lumps. Take care not to over-mix.
Heat up a nonstick frying pan over medium heat and lightly grease the surface. Scoop or spoon some pancake batter onto the pan, and cook for a couple minutes until you see bubbles form at the top and just begin to pop. This is your indication to flip! Cook for another one to two minutes on the other side. Finish cooking the remaining pancake batter. Serve with fruit, maple syrup, cream and enjoy!
