Sweet Quark Pouch

This delicious breakfast pastry is available in all patisseries and bakeries wherever you go in Hungary.

Serves: 16
Prep: 30 minutes + 2 hours resting time
Cook: 20-25 min
Ingredients:
Dough:
50ml + 150ml milk
1tbsp dry yeast
100g sugar
400g plain flour
50g butter (lukewarm)
1 egg + 1 egg yolk for egg-wash
1/4 tsp salt
Quark filling:
250g quark
1 egg + 1 egg for egg wash
4tbsp sugar
1tsp vanilla extract
1tbsp lemon zest
Sultanas (optional)
Preparation:
For the dough, warm-up 50ml milk (only lukewarm – otherwise you can ruin the yeast). Stir in the yeast and the sugar.
Put the flour in a large mixing bowl. Form a well in the middle and pour in the yeasty-milk. With a fork mix in a little bit of the flour (only enough flour to make the consistency like gravy) and leave the majority of the flour untouched. Cover it with cling film and set it aside, to activate the yeast, for 1 hour.
Mix in all the other ingredients and knead it with a hand mixer for about 5-10 minutes until smooth and stretchy. Cover it with cling film and set it aside again to proof for 1 hour.
Line a baking dish and mix the quark filling ingredients.
Knead the dough a little bit and roll it out (about 0.3cm) thin. Cut 10cm squares, put 1 tbsp filling in the middle and sprinkle as many sultanas on top as you like. Now bring the four corners to the middle, pinch them together thoroughly and twist it. Lay them into the lined baking tray, brush the top with the beaten egg and bake for 20-25 minutes (until golden brown on top). Don’t worry if the pouches open up, it just means that it has lots of filling in it and it is part of its rustic charm. 😁
