Such a brilliant and easy dessert... you can fill them with anything you like, the sky is the limit!

Level: Easy

Serves: 16

Prep: 15 min

Cook: 25-30 minutes

Ingredients:

Dough:

200g plain flour

1 heaped tbsp sugar

¼ tsp salt

75g butter

2 eggs

1 tbsp cold water

Filling:

16 tsp mixed berry jam

(you can use any jam you like)

1 egg

Preparation:

Preheat the oven on 175C and line a baking sheet with baking paper.

Mix together the flour, sugar and the salt. Cut the butter into 1 cm cubes and incorporate it into the flout with a pastry cutter until it resembles fine crumbs. Add the eggs and the water and form a dough. Roll it out on a floured surface, cut out 8cm diameter circles with a biscuit cutter and spoon 1 tsp jam in the center of each circle. Whisk an egg and give the edges a thin layer of egg wash (it will act as glue), then fold the circles in half and press the edges together. Make sure it is sealed properly! Put them onto the lined baking tray, cut a small airhole on the top of each pasty and give them an egg wash. Bake on the baking tray for 25-30 minutes until they have a nice golden colour.

Let them cool completely, sift powder sugar on top and enjoy!
