Sour Cherry Shortbread

Everything you want from shortbread just a little bit more special!

Level: Easy
Serves: 6
Prep: 15min. + 1 hour
Cook: 50 minutes
Ingredients:
100g butter
50g sugar
150g flour
50g cornflour
2 tsp sour cherry jam
2 drops of natural cherry flavouring (or cherry essence)
1 tsp lime juice
Preparation:
Cream sugar and butter together until light and fluffy. Add the other ingredients and form a medium soft dough. In a freezer bag put it in the fridge for 1 hour.
Line a baking tray with baking paper and preheat the oven on 140C.
On a floured surface, roll out the dough to 1 cm thickness, if you use biscuit stamp, or 0.5cm if you don’t. If the dough is too soft to work with, add more flour. With an (8cm) biscuit cutter cut out the biscuits and lay them onto the lined baking tray. Bake them for 50 minutes. Enjoy with tea, coffee or a glass of milk!
