Sour Cherry and Pecan Loaf Cake

Sweet, sour, spongy, moist and crunchy. It has everything you could wish for in a cake!

Serves: 8

Prep: 10 min

Cook: 1hour 30 min.


Ingredients:


Dough:

115g butter

190g self-rising flour

100g sugar

½ tsp baking powder

½ tsp baking soda

65g chopped pecans

¼ tsp salt

250ml milk

300g frozen cherries

½ tbsp sugar

Preparation:


Preheat the oven on 175C and butter and line a 2 lbs loaf baking dish.


Melt the butter in the microwave. In a mixing bowl mix the flour, sugar, baking powder, baking soda, salt, melted butter and milk thoroughly. Add the chopped pecans, mix again, then add the cherries and mix it gently. Pour the mixture into the buttered and lined dish, sprinkle 1/2tbsp of sugar on top and bake on 175C for 1 hour 30 minutes. After 40 min. put some foil loosely on the top. Do the toothpick test, if it doesn’t come out clean put the cake back for another 5 minutes. Let it cool down and enjoy!
