King Richard III ‘s Jumbles

Traditionally they were S-shaped biscuits and they said to have been dropped from Richard III's cook's pocket on the battlefield of Bosworth.

Ingredients:
65g softened butter
65g sugar
1 egg
Zest of a lemon
25g ground almonds
150g plain flour
1tbsp milk (if needed)
½ tsp flavouring of your choice (optional)
e.g. ground ginger, cinnamon, allspice, zest, cocoa…
Preparation:
Preheat the fan oven on 160C and line a baking tray. Beat the butter and sugar together until soft and fluffy. Stir in the egg and then all the other ingredients. Work it into a medium soft dough. (If the dough is too hard add 1 tbsp of milk if it is too soft add a tbsp of flour.)
Traditionally it is an S-shaped biscuit so you can roll out strips and form them into an S. Or, to save time, make 16 little balls (about 2 cm in diameter), put them on the baking sheet and press them down and bake for about 17 minutes. Let them cool down on a cooling rack and enjoy!
