Pecan and Apricot Rolls

So easy and just sooo goood!

Level: Easy

Serves: 8

Prep: 10 minutes

Cook: 25-30 minutes


Ingredients:


Pastry:

Shop bought puff pastry


Filling:

150g pecan nuts

50g sugar

1tsp vanilla extract

50g butter (room temp.)

8 tsp apricot jam

1 egg


Preparation:

Line a baking sheet with baking paper. Preheat the oven to 175 degrees Celsius.


With a food processor, blitz the pecans to a breadcrumb consistency. Add the sugar, vanilla extract and butter and blitz it together until it forms a coarse paste. Cut the pastry approximately 10cm x 10cm squares, spread 1 tsp of apricot jam around the pastry, leaving 2cm gap around the edges. Then spoon 1-2tbsp pecan paste into the middle and spread it around a bit. Fold in 2 cm in 2 opposite ends, then roll up the pastry into a roll. (Or you can fold it or close it any way you like it.) Score in the top and give it an egg wash. Bake for 25-30 minutes or until golden brown. Enjoy.
