Perfect bake for any holiday! Serve warm or even toasted with some butter and a cup of tea... beautiful!

Ingredients:
Dough:
1 tbsp lemon zest
100ml rum/brandy/whisky/sherry
80g sultanas
500g plain flour
1 tbsp dry yeast
125ml milk (lukewarm)
150g caster sugar
5 eggs
150g butter (melted)
1 tbsp vanilla extract
½ tsp salt
125ml double cream or coconut milk
80g candied peel
Topping:
50g powder sugar (optional)

Preparation:
Zest a lemon and put the zest aside. Soak the sultanas in the rum (or your chosen alcohol) and set it aside.
In a stand mixer mix the flour, yeast, milk, sugar, eggs, butter, vanilla extract, salt and double cream together until nice and smooth. Cover it and set it aside to rest for 30 minutes.
Preheat the oven 175C and butter a bunt pan.
Add the drained sultanas, candied peel to the batter and mix. Pour it in the bunt pan, cover it and let it rest for another 30 minutes. Then bake it for 50 minutes. (Note: If you use 2 small 17cm diameter form, then bake for 25 minutes.)
