My Mum’s Meatloaf

Meaty moist meatloaf which is a trip down on memory lane for me... it doesn't just taste delicious, I always remember it looking amazing on our Christmas table as well.

Level: Easy

Serves: 8

Prep: 10 minutes

Cook: 80 minutes


Ingredients:


800g pork mince

3 eggs

4tbsp breadcrumbs

2tbsp Cajun seasoning (or any seasoning)

2tsp onion powder

½ tsp cayenne pepper

½ tsp hot paprika

Salt+ Pepper to taste


+ 4 hard-boiled eggs

Preparation:


Line a roasting pan with foil and preheat the oven to 175C. Boil 4 eggs until they are hard.

Mix all the meatloaf ingredients together (apart from the hard-boiled eggs) and put half on the lined baking pan forming an oval base. Peel the eggs and put them in the middle, one after the other. (You might need more eggs or less, depends on the size you are making. Cover the eggs with the rest of the meatloaf mix and form it into a kind of a bread loaf shape. Decorate the top however you want it or leave it as it is. Put it into the oven and bake for 80 min. Let it rest for 15 min, then slice and enjoy!
