I read about these one batter wonders and I had to try it! You get a spongy layer, a custard layer and a fudgy layer from 1 batter! It is truly magical š

Ingredients:
4eggs (room temp.)
100g sugar
115g butter (melted)
1tsp vanilla extract
100g plain flour
485ml milk (lukewarm)
Powdered sugar for dusting (optional)

Preparation:
Preheat the oven (160 degrees Celsius) and butter or line a 20cm x 20cm baking dish.
Separate the eggs. In a stand mixer beat the egg yolks and sugar together until light and fluffy. Add the melted butter and the vanilla extract. Beat for a minute or two. Incorporate the flour into the mixture (in small batches!) and beat until well combined. Slowly start adding the lukewarm milk and mix until everything is well mixed together. Add the egg whites to a separate mixing bowl and with a hand mixer whisk it until stiff peaks form. Gently fold in the egg whites to the batter. Donāt fold them in fully, you still want to see some white bits floating at the top. Pour batter into the lined baking dish and bake for 45-60 minutes or until the top is golden. Let it cool down completely, sprinkle some powdered sugar on top and enjoy!
