Low Sugar Honey Strawberry Jam

Super easy and full of goodness!

Level: Easy

Serves: 14tbsp serving or about 200ml

Prep: 5 min

Cook: 45 minutes


Ingredients:


400g ripe strawberries (chopped)

2tbsp water

1tsp chia seeds (ground)

1tsp lemon juice

1tbsp honey


Preparation:


In a medium saucepan, with a lid on, start cooking on medium heat the chopped strawberries with the water for about 15 minutes.

Then mash the strawberries with a potato masher. Add the lemon juice and without the lid continue to cook it on medium-low heat for about 30 minutes. Stir regularly with a wooden spoon and in the last 5 minutes of cooking stir constantly. (The exact cooking time will depend on your pan and on your cooker but basically, cook until thick.) Take off the heat and add the honey. (The exact amount you need depends on the ripeness of the strawberries and your taste.) Then stir in the ground chia seeds-this helps thicken the jam. (If you can’t find ground chia seeds, just put the amount you need into pestle mortar and grind it until resembles whole wheat flour.) Let it cool down a bit, put it in a jar, then let it cool down completely. Store it in the fridge for about 2-3 weeks. Enjoy!
