Lemon Squares

Crumbly buttery bottom with a lemon custardy topping. Soo sweet, soo lemony, a taste of sunshine in a bite! (I adapted this recipe from the formidable Pioneer Woman.)


Level: Easy

Serves: 18

Prep: 15 min

Cook: 45 minutes


Ingredients:


Dough:

250g flour

100g sugar

½ tsp salt

225g cold butter


Filling:

300g sugar

35g flour

5 eggs

4 lemon – juice and zest

Powder sugar – for decorating


Preparation:


Preheat the oven on 175C. Butter a 23cm x 33 cm baking pan.


Mix together the flour, sugar and the salt. Cut the butter into 1 cm cubes and incorporate it into the flout with a pastry cutter until it resembles fine crumbs. Pres it into the buttered pan and bake it for 20 minutes.


For the filling, mix together all the ingredients until smooth, pour it over the baked crust and bake it for another 25 minutes.


Let it cool completely, then put it in the fridge for 2 hours. Sift powder sugar on top, cut into squares and enjoy!
