Lemon and Lime Bunt Cake

Beautify spongy cake which will steal the show at any tea-party.

Ingredients:
Cake:
340g butter (room temp.) or margarine
600g sugar (3 cups)
5 eggs
360g flour (3 cups)
½ tsp salt
235ml fizzy lemonade (e.g. 7Up or Sprite)
1 tbsp lemon zest
1 tbsp lime zest
260g powdered sugar
2 tbsp lemon juice
1 tbsp lukewarm water
1 zest of a lemon (dried)
1 zest of a lime (dried)
Preparation:
Preheat the fan oven on 160C and butter a bunt pan. Beat the butter and sugar together until soft. Mix in the eggs, one at a time, mixing after each egg. Stir the salt into the flour, then add them to the butter mix bit by bit. Add the fizzy lemonade, the lemon zest, and the lime zest and mix it until
Everything is combined. Fill the mixture into the greased bunt pan. Try to make the surface as even as possible. Bake it for 1 hour and 15 minutes. Do the toothpick test if it comes out clean it is done if it isn’t put it back for another 5 minutes, then test again. If it is done remove from the oven but let the cake stay in the bunt pan for another 15 minutes and then you can try to carefully turn the cake out onto a cake plate. Let it cool down completely.
Zest the lemon and the lime onto a paper towel and let it dry for 30 minutes. Mix 260g powder sugar, 3tsp lemon juice, and 1 tbsp lukewarm water and pour it over the completely cooled down cake and sprinkle with lemon zest. Or sprinkle I with powdered sugar. This cake is a showpiece at any afternoon tea party. Enjoy!
