Jam-packed Cookies

It has everything you want in a cookie, sweetness, crunch, nuttiness, chewiness and CHOCOLATE... Full of good stuff and they are to die for!

Level: Easy

Serves: 34

Prep: 15 min

Cook: 13 minutes


Ingredients:

1 cup flour

1 tsp baking powder

1 tsp sodium bicarbonate

1 tsp instant coffee

½ tsp salt

150g butter softened

½ cup of sugar

½ cup brown sugar

1 egg

1 tsp vanilla extract

200g chocolate chips

90g oats

75g shredded coconut

75g Pecans


Preparation:

In a bowl add the dry ingredients and stir. In a mixing bowl add the butter, beat it until fluffy, then add the sugar and brown sugar and mix them well. Whilst mixing on a low setting, add the egg, then add the vanilla extract, gradually add the flour mixture and mix it until smooth. Add all the rest of the ingredients and stir them in. Cover the mixing bowl and put the mixture into the fridge for 30 minutes. Preheat the oven on 175C and line a baking tray.

With a scoop (4 cm diameter scoop for 6-7cm cookies) arrange the cookies onto the lined baking sheet and bake for 13 minutes. Let them cool down on a cooling rack and enjoy!
