My mum used to make these every Sunday and I could never get enough of them :)

Level: Easy

Serves: 8

Prep: 15 min

Cook: 30 minutes

Ingredients:

8 chicken thighs (or any other parts)

Salt

Pepper

175g Flour

5 eggs

175g breadcrumbs

½ L vegetable oil

Preparation:

Prepare the chicken. Cut into the meat both sides of the bones so it can cook easier. Salt and pepper both sides of the chicken thighs (you can use any seasoning you want) cover them and leave them in the fridge for ½ hour-1 hour.

Put the oil in a frying pan and turn it on on medium heat. Take a thigh and turn it around in the flour until covered. Then put it into the whisked eggs and then into the breadcrumbs. Make sure the meat is covered completely. Check the oil is warm, then turn down the heat to low and put the chicken in. The oils shouldn't cover them completely, only halfway. Fry each side for about 15 minutes. It is essential that you cook them on a low heat to ensure that the thighs are cooked through. Check by taking one out and cut into it by the bone. If there is any red put it back. Serve warm with chips and gherkins. Enjoy.
