Easy Plum Sponge Squares

Perfect for using up leftover ripe fruit...it is so easy and yummy!

Ingredients:
Cake:
1 cup flour
½ cup sugar
1/8 tsp salt
110g butter
1 cup hot water
¼ cup Greek yogurt
2 eggs
1 tsp sodium bicarbonate
1 tsp vanilla extract
Topping:
3 ripe plums
1 tsp sugar
¼ tsp cinnamon
Preparation:
Line a 26cm x 18cm baking pan with greaseproof paper and preheat the oven on 175C.
In a bowl combine flour, sugar and salt.
Melt the butter, add the hot water, stir, then combine it with the flour mixture (not fully) to cool it down.
In a bowl combine the yogurt, eggs, sodium bicarbonate and vanilla extract. Add this yogurt mixture to the flour and butter mixture and mix it until smooth. Pour the batter to the lined baking pan. For the topping, halve and pit the plums and place them on top of the batter. Mix together the sugar and the cinnamon and sprinkle it over the cake. Bake it for 20-25 minutes. Do the toothpick test. If it isn’t clean, put it back in the oven for another 5 minutes, then do the test again. Let it cool down, sprinkle it with powdered sugar (optional) and enjoy!
