Crispy and Chewy Peanut Butter Cookies

These are such lovely, sweet and crispy cookies. It has the texture, the flavour, the look, everything you whish from a biscuit. If you make them, you will not regret it!

Level: Easy

Serves: 18

Prep: 15 min

Cook: 10 minutes


Ingredients:


113g peanut butter

50g butter or margarine

½ cup brown sugar

½ cup sugar

1 egg

1 tsp vanilla extract

¼ tsp salt

½ cup flour

½ tsp sodium bicarbonate

1 cup oats

1 cup chopped banana chips (optional)


Preparation:


Preheat the fan oven on 175C and line a baking tray. Beat the peanut butter, butter, brown sugar and sugar together until soft. Mix in the egg, vanilla extract and salt. Add the flour, sodium bicarbonate, oats and chopped banana chips and mix until combined. Make 18 little balls (about 2 cm in diameter), put them on the baking sheet and press them down a bit if you want them crispy. If you want them chewy, leave them as balls. Bake for about 10 minutes. Take out the tray but leave the cookies on the tray for another 5 minutes. They are really soft at this point. After about 5 minutes they will be hard enough to be transferred onto a cooling rack. Let them cool down completely and enjoy!
