Cinnamon Shortbread Biscuits

These are hands down the best biscuits I've ever made! Buttery biscuit with the brown sugar, cinnamon and the butter turns to a caramely filling....ohhhh my!

Prep: 20min. + 2 hours cooling time
Cook: 50 minutes
Ingredients:
200g butter (room temp.)
100g light brown sugar
1 pack vanilla sugar
(or ½ tsp vanilla extract)
200g plain flour
100g cornflour
½ tsp salt
Filling:

50g light brown sugar
2tsp cinnamon
25g butter (melted)
Icing:
50g powdered sugar
½ tbsp milk
Preparation:
Cream sugar and butter together until light and fluffy. Add the other ingredients and form a medium soft dough. Wrap it in cling film and put it into the fridge for 1 hour.
On a floured baking paper, roll out the dough to a 0.5cm thick rectangle. Mix the sugar and the cinnamon. Brush the melted butter on the top, then sprinkle the cinnamon mix on top of the melted butter. With the help of the baking paper, roll it up (from the shorter side so you get lots of lines. Wrap it again in cling film and refrigerate for 1 hour.
Line a baking tray with baking paper and preheat the (fan) oven on 140C.
Take the dough out of the wrapper and cut 1cm thick slices. Place them on the baking tray and bake them for 50 minutes. Mix the icing and decorate the biscuits with it. Let them cool down on a cooling rack and enjoy with tea, coffee or a glass of milk!
