Chocolate Orange Marble Cake

Great for picnic, afternoon cake or as a present to someone special.

Serves: 8

Prep: 20 min

Cook: 1 hour


Ingredients:


225g butter (room temp.)

225g sugar

4 eggs

½ tsp salt

½ tbsp vanilla extract

225g flour

1 tbsp orange zest

½ tsp orange extract (optional)

3 tbsp cocoa powder


Preparation:


Preheat the oven on 175C, butter and line (with baking paper) a 2 lbs loaf tin.


Cream butter and sugar together until light and fluffy. Add eggs, one at a time and add the vanilla extract. Whilst mixing on medium speed gradually add the flour and mix it until fully incorporated and smooth. Half the batter, in one half, add the orange zest, the orange extract and mix, in the other half add the cocoa powder and mix. Spoon the batter into the buttered and lined loaf tin, alternate between the 2 flavours. With a toothpick make swirls in the batter. Bake for an hour. Do the toothpick test, if the toothpick comes out clean it is done, if it doesn’t, put the cake back for another 5 minutes and then check again. Let it cool down completely, then slice and enjoy!
