Chocolate Chip Cookies

I embarked on a journey to make the perfect chocolate chip cookies. I wanted crispiness, chewiness and chocolatiness. I think I came pretty close this time đ

Ingredients:
100g butter (room temp.) or margarine
100g caster sugar
1 egg
1 tsp vanilla extract
½ tsp salt
175g plain flour
½ tsp sodium bicarbonate
½ tsp instant coffee granules (optional)
100g dark chocolate chips
100g milk chocolate chips
Preparation:
Preheat the oven to 175C and line a baking tray with greaseproof paper.
Mix the butter and sugar together until soft (by hand!). Mix in the egg, vanilla extract and salt. In a separate bowl mix the flour, sodium bicarbonate and add them to the butter mixture (3 tbsp at a time). Mix until just combined (donât over mix it). Stir in the chocolate chips.
Use a small ice-cream scoop to scoop little balls onto the baking tray or make 18 little balls (about 2 cm in diameter), put them on the baking sheet and press them down with two fingers (until about 1cm thick). Bake for about 12 minutes. Take out the tray but leave the cookies on the tray for another 5 minutes. They are really soft at this point. After about 5 minutes they will be hard enough to be transferred onto a cooling rack. Let them cool down completely and enjoy!
