Rich brownies wit fresh soft cheese, it shouldn’t work but it does!

Level: Easy

Serves: 8

Prep: 10 minutes

Cook: 25 minutes

Ingredients:

Brownie layer:

225g dark chocolate

225g butter

3 large eggs

1 tsp vanilla extract

75g self-raising flour

175g milk chocolate chunks

Cream Cheese layer:

250g 50% less fat cream cheese

50g sugar

1tsp vanilla extract

1 large egg

35g corn starch

Preparation:

Preheat the oven to 175 degrees Celsius. Grease a brownie pan (27cmx22cm) and line it with baking paper.

For the brownie layer, melt the butter and dark chocolate together. In a mixing bowl, combine the eggs, vanilla extract and the self-raising flour. Mix in the melted butter and chocolate mixture. Stir until smooth and pour it into the lined baking pan.

For the cream cheese layer, combine all the ingredients and mix until smooth. Pour it over the brownie mixture. (You can leave it like that if you prefer layers or you can make a swirl pattern with a long toothpick. Note: the brownie layer is heavier so you might need to lift some of the brownie batter over the cream cheese layer with a spoon to expose the brownie batter for the swirl.)

Bake for 25 minutes. Let it cool on a cooling rack and enjoy!
