Afternoon tea is no fun without biscuits. These lovely chocolate biscuits are perfect for any occasion!

Level: Easy

Serves: 16

Prep: 15min. + 2 hours

Cook: 13 minutes

Ingredients:

320g flour

1 tsp baking powder

¼ tsp salt

2 tbsp cocoa powder

150g butter (room temp.)

200g brown sugar

1 egg

½ tbsp vanilla extract

Biscuit cutter

Preparation:

Combine flour, baking powder, salt and cocoa powder in a bowl and set it aside. Cream the butter and sugar until light and fluffy. Mix in the egg and the vanilla extract. Bit by bit add the flour mixture to the butter mixture and mix until completely combined. Put the dough in a freezer bag, flatten it a bit, and put it in the fridge for 2 hours.

Line a baking tray with baking paper and preheat the oven on 175C.

On a floured surface, roll out the dough to 1 cm thickness, if you use biscuit stamp, or 0.5cm if you don’t. With a biscuit cutter cut out the biscuits and lay them onto the lined baking tray. Bake them for 13 minutes. Enjoy with tea, coffee or a glass of milk!
