Cherry And Pecan Cake

My husband decided that this is my signature cake (if I ever go to the British Bake-Off hahaha). I do it all the time because it's so easy. Not much washing up after either and it is just yummy!

Level: Easy

Serves: 12

Prep: 10 min

Cook: 1 hour


Ingredients:

Dough:

115g butter

1 ½ cup self-rising flour

3/4 - 1 cup of milk

½ cup chopped pecans

300g frozen cherries

½ tbsp sugar


Preparation:

Preheat the oven on 175C and butter a baking dish. (I used 22cm round cake tin, 22cm round pie dish so far with this recipe successfully. I also tried 2LB loaf pan, which needs about 30 minutes longer in the oven. I tried bunt pan and when it came out it was lovely but I struggled to get it out a few times so I gave up on that.)

Melt the butter in the microwave. In a mixing bowl mix the flour, sugar, melted butter and milk thoroughly. Add the chopped pecans, mix again, then add the cherries and mix it gently. Pour the mixture into the buttered dish, sprinkle 1/2tbsp of sugar on top and bake on 175C for 1 hour. Do the toothpick test, f it doesn’t come out clean put the cake back for another 10 minutes. Let it cool down and enjoy!
