Cabbage Pasty Rolls

Again an all time favourite in my family... Every time I bite into one of these it sends me back to my childhood... They don't sound anything special but boy oh boy these are delicious!

Serves: 12
Prep: 1 ½ hours
Cook: 35-40 minutes
Ingredients:
Filling:
1- 1½ kg cabbage (red or white)
1 tbsp salt
3 tbsp butter
1 tsp pepper
Dough:
400g flour + for dusting
100g lard
1 egg
½ tsp salt
150g natural yoghurt
On the top:
1 egg
Preparation:
Filling: Take off the outer leaves of the cabbage, cut out the middle and shred it. Mix in the salt and let it rest for ½ hour - 1 hour. Then using your hands squeeze the moisture out of the cabbage. Add the pepper. Warm up the butter in a large pan and caramelise the cabbage on low-medium heat. Be patient it will take a while.
Preheat the oven to 170 degrees Celsius, and line a (36cm x 28cm) baking tray with grease-proof paper.
Dough: Put the flour in a bowl, cut the lard into 1-2cm cubes and work the lard in until resembles crumbs. Add salt, egg and the yoghurt and form it into a medium-hard dough. Roll it out (35cm wide, 70cm long and 0.3 cm deep).
Pour the filling onto the rolled out dough, fold in 2cm from each side, then roll it up and push it down a bit. Cut them into 2-3cm thick pieces. Put them into the lined pan, give them an egg wash and bake them for 35-40 min. When they are done put a tea towel over them and let them cool down. Enjoy every bite of these savoury delights!
