Blueberry Muffin

It’s so disappointing when you buy a blueberry muffin and there are like 3 blueberries in it… I declare war against those muffins! My blueberry muffin burst with fruit and they are sooo delicious and cakey.

Level: Easy

Serves: 6

Prep: 5 minutes

Cook: 30 minutes


Ingredients:


Cake:

1 cup plain flour

½ tsp baking powder

½ cup sugar

¼ tsp salt

1 egg

8g vanilla sugar or

1 tsp vanilla extract

50ml milk

50ml sunflower oil


Fruit:

150-200g frozen blueberries


Preparation:

Put muffin cups into 6 muffin pan. Preheat the oven to 220 degrees Celsius (not fan oven, normal oven!).


In a large mixing bowl, with a hand mixer, mix together all the cake ingredients. Carefully fold in the blueberries. With a large ice-cream scoop, scoop 1 scoop of batter into each muffin cup. Bake for 30 minutes. Do the toothpick test. If the toothpick comes out clean, it is done. Let the muffins cool down on a cooling rack. Enjoy!
