Blueberry Cake

Fluffy and moist cake with blueberries. This cake is one of those chuck everything in a bowl and mix wonders. Great recipe from my sister-in-law Judit 😁

Level: Easy

Serves: 24

Prep: 5 minutes

Cook: 40 minutes


Ingredients:


Cake:

2 eggs

8g vanilla sugar or

1 tsp vanilla extract

1 cup sugar

2 cups flour

200ml milk

100ml sunflower oil

12g baking powder

Fruit:

1 cup blueberries


Preparation:

Grease a (30cm x 24cm x 6cm) baking pan then line it with baking paper. Preheat the oven to 175 degrees Celsius.


In a large mixing bowl, with a hand mixer, mix together all the cake ingredients. Pour the batter into the greased and lined baking pan. Scatter the blueberries around the top and bake it for 40 minutes. Do the toothpick test. If the toothpick comes out clean, it is done. Let the cake cool down on a cooling rack, then remove the baking paper. Dust it with powdered sugar (optional) and cut it into squares. Enjoy!
