I just love a good cuppa with some biscuits! I also like to know exactly what goes into my biscuits -only natural ingredients š

Level: Easy
Prep: 10min. + 1 hours cooling time
Cook: 40 minutes
Ingredients:
250g butter (cold)
100g sugar
1 pack vanilla sugar
(or ½ tsp vanilla extract)
650g plain flour
100g cornflour
½ tsp salt
4 eggs (beaten)
Flavour ideas:
Chocolate:
2 tbsp cocoa powder
Rum and Raisins:
1tsp rum extract
100g raisins

Bacon and Maple syrup:
2 tbsp maple syrup
100g cooked pancetta
Cinnamon roll:
(to go on top not in the dough
25g butter (melted)
50g brown sugar
2tsp cinnamon
Salted caramel:
(to go on top not in the dough)
Caramel sauce
Coarse sea salt
Lemon:
2 tbsp lemon zest
100g candied peel
Preparation:
Divide all the ingredients in 4 so that you can do different flavours.
Cube 62.5g butter. In a large mixing bowl add 25g sugar, ¼ pack of vanilla sugar, 162.5g flour, 25g cornflour, a pinch of salt. Work in the butter until it resembles fine crumbs. Add an egg, any flavourings of your choice and form the dough into a ball. (If the dough is not coming together at all, add 1tsp of milk but try not to.) Wrap it in cling film and put it into the fridge for 1 hour.
Line a baking tray with baking paper and preheat the (fan) oven on 140C.
Take the dough out of the wrapper, roll them out about 1cm thick and cut them out in any shape you like. Place them on the baking tray and bake them for 40 minutes or until lightly golden at the edges. Let them cool down on a cooling rack and enjoy with tea, coffee or a glass of milk!
