Best Ever (low carb) Meatballs

These are sooo good!

Level: Easy

Serves: 8

Prep: 5minutes

Cook: 45 minutes


Ingredients:


Meatballs:

400g pork mince

2 eggs

2tbsp breadcrumbs

1tbsp taco seasoning

1tsp onion powder

¼ tsp cayenne pepper

¼ tsp hot paprika

Salt+ Pepper to taste


Vegetables:

1 large onion (chopped)

1 green bell pepper (chopped)

1 yellow bell pepper (chopped)

1 zucchini (sliced with potato slicer)


Sauce:

1 can chopped tomatoes

1 cup of water

1 stock cube (vegetable or chicken)

1tbsp garlic granules

½ tbsp oregano

1tsp sugar

Salt + pepper to taste

½ a pack of feta cheese


Preparation:


In a big frying pan melt 1-2 tbsp butter. In a mixing bowl mix together all the ingredients for the meatballs. Form golf ball-sized balls and place them into the frying pan to sear them until they are nice and golden on the outside. Take them out and place them aside. In the same frying pan add the chopped onion and let it soften a bit. Add the peppers and start slicing the zucchini with a potato slicer to get long strips (like fettucine). Add the zucchini to the frying pan. Add 1 can of chopped tomatoes and 1 cup of water to the frying pan. Add the stock cube, granulated garlic, oregano, sugar, salt and pepper and stir. Place the meatballs back into the sauce and vegetable mixture, crumble the feta cheese on top and let it simmer for about 10-15 minutes. Garnish it with some chopped spring onions (optional). Enjoy!
