Basic Loaf Pan Cake

Enjoy it on a sunny day, at a picnic, on a family trip to the seaside or just at home! You can add any flavours to this amaizing and versatile recipe, or enjoy it as it is...spongy, sweet and delicious!

Serves: 8

Prep: 20 min

Cook: 1 hour


Ingredients:


225g butter (room temp.)

225g sugar

4 eggs

½ tsp salt

½ tbsp vanilla extract

1 tbsp orange zest

225g flour


Preparation:


Preheat the oven on 175C, butter and line (with baking paper) a 2 lbs loaf tin.


Cream butter and sugar together until light and fluffy. Add eggs, one at a time, then add the vanilla extract and the zest. Whilst mixing on medium speed gradually add the flour and mix it until fully incorporated and smooth. Pour the batter into the buttered and lined loaf tin. Bake for an hour. Do the toothpick test, if the toothpick comes out clean it is done, if it doesn’t, put the cake back for another 5 minutes and then check again. Let it cool down completely, then slice and enjoy!
